キモトリプシンは、高度に精製されたウシ膵臓由来のセリンエンドペプチダーゼで、芳香族アミノ酸（Tyr, Phe, Trp）のC末端側を選択的に加水分解します。LeuおよびMetでも低い割合で切断が認められる場合があります。キモトリプシン活性の至適pHは7.0-9.0です。このシークエンシンググレードの酵素は単独あるいはほかのプロテアーゼと組み合わせてタンパク質消化を行い、ペプチドマッピングやペプチドマスフィンガープリンティングやMS/MSスペクトルマッチングによるタンパク質同定などに使用することができます。本酵素は溶液中あるいはゲル内での消化反応に適しています。
